HOW WE PREPARE IT

We take gluten-free requests seriously.

We use a clean preparation area, separate utensils and separate cutters. Before baking, we brush the area of the oven stone where the pizza will be placed to remove loose flour and residue.

The pizza is then baked directly on the stone in our 750°F gas-fired oven.

PLEASE READ BEFORE ORDERING

Night Kitchen is a flour-based kitchen. Wheat flour is handled throughout our kitchen, airborne flour is present, and our gluten-free pizzas share the same oven stone as our regular pizzas.

Our precautions are intended to reduce cross-contact, but we cannot guarantee a completely gluten-free environment.

If you have celiac disease, a wheat allergy or a serious sensitivity, please tell us before ordering so you can decide whether our preparation method is appropriate for you..

INGREDIENTS AND ALLERGEN INFORMATION

Our gluten-free crust contains:

Rice flour, water, potato starch, tapioca starch, rice starch, potato flour, cane sugar, modified rice starch, canola oil, yeast, salt, extra-virgin olive oil and xanthan gum.

Night Kitchen has served many guests with celiac disease and other gluten-related dietary needs during our 27 years in business, without receiving a complaint concerning gluten cross-contact.

We’re proud of that history, but we remain transparent about our shared kitchen and oven because every guest should have the information needed to make their own decision.
