Pizza That Never Played By The Rules
When Night Kitchen opened in the summer of 1999, the goal wasn't simply to create another neighbourhood pizzeria. We wanted to build a place where quality ingredients, creativity, and a willingness to challenge convention could come together around great food.
What started in a tiny hole-in-the-wall on a shoestring budget has grown into one of Peterborough's most distinctive dining experiences. Along the way we've remained independently owned, stubbornly committed to quality, and passionate about doing things our own way.
Why Night Kitchen?
From the beginning, we believed pizza could be more than pepperoni and mushrooms.
While others followed the rules, we experimented with local ingredients, global flavours, vegan options, gluten-free options, natural wines, and combinations that some people thought didn't belong on pizza at all.
Some ideas worked immediately. Others took time. But the philosophy has remained the same:
Taste matters. Quality matters. Creativity matters.
Our motto has long been:
Be Strong. Be Wrong.
Not because we enjoy being wrong, but because trying new things means occasionally taking risks. That's how great food evolves.
More Than Pizza
Night Kitchen has always been about more than what's coming out of the oven.
It's about the farmers who grow the food, the winemakers and brewers who fill our glasses, the coffee roasters who keep us going, the staff who bring energy to every shift, and the customers who have supported us for more than two decades.
We're proud to work with local producers, passionate craftspeople, and a growing network of collaborators and co-conspirators who share our values.
Still Going Strong
More than 25 years later, we're still making pizza by hand. We're still searching for great ingredients. We're still finding new ways to surprise ourselves and our customers.
